Anchu Kumm Curry (spicy Coorgi Mushroom Curry)

Ingredients

  • 500g fresh mushrooms, sliced
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds and mustard seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and green chilies, and sauté for a few minutes.
  3. Now, add the turmeric powder, red chili powder, and coriander powder. Mix well and cook for 2-3 minutes.
  4. Next, add the tomato puree and cook until the oil separates from the masala.
  5. Add the sliced mushrooms and mix well. Cook for 5-7 minutes until the mushrooms are tender.
  6. Pour in the coconut milk and simmer for a few minutes. Add salt to taste.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
