Anchu Kumm Curry (spicy Coorgi Mushroom Curry)
Anchu Kumm Curry is a traditional spicy Coorgi mushroom curry that is bursting with flavors. This dish is a staple in Kodava cuisine and is perfect for those who love a bit of heat in their food.
Ingredients
- 500g fresh mushrooms, sliced
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 green chilies, slit
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 cup coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds and mustard seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, and sauté for a few minutes.
- Now, add the turmeric powder, red chili powder, and coriander powder. Mix well and cook for 2-3 minutes.
- Next, add the tomato puree and cook until the oil separates from the masala.
- Add the sliced mushrooms and mix well. Cook for 5-7 minutes until the mushrooms are tender.
- Pour in the coconut milk and simmer for a few minutes. Add salt to taste.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
