Ingredients

  • 6 eggs
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  2. Add the ginger-garlic paste and sauté for a minute.
  3. Now, add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates from the mixture.
  4. Break the eggs directly into the pan and scramble them with the masala mixture.
  5. Sprinkle garam masala and cook for a few more minutes until the eggs are fully cooked.
  6. Garnish with fresh coriander leaves and serve hot.
