Andalusian Gazpacho

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cups tomato juice
  • Salt and pepper to taste

Instructions

  2. While blending, slowly pour in the olive oil and red wine vinegar.
