Ingredients
- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 green bell pepper, chopped
- 1 small red onion, chopped
- 2 garlic cloves, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 cups tomato juice
- Salt and pepper to taste
Instructions
- In a blender, combine the tomatoes, cucumber, bell pepper, onion, and garlic. Blend until smooth.

- Add the tomato juice and blend until well combined.
