Andalusian-style Chickpea Fritters (Pestiños de Garbanzo a la Andaluza)

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 cup chopped fresh parsley
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a food processor, combine the chickpeas, onion, garlic, cumin, paprika, and parsley. Pulse until the mixture is well combined but still slightly chunky.
  2. Transfer the chickpea mixture to a bowl and stir in the flour, baking powder, salt, and pepper until fully incorporated.
  3. Heat 2 inches of vegetable oil in a large, deep skillet over medium-high heat.
  4. Scoop spoonfuls of the chickpea mixture and carefully drop them into the hot oil. Fry the fritters in batches for 3-4 minutes, or until golden brown and crispy.
  5. Remove the fritters with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
  6. Serve the pestiños de garbanzo warm with your favorite dipping sauce or enjoy them on their own.
