Andalusian-style Chickpea Fritters (Pestiños de Garbanzo a la Andaluza)
Pestiños de Garbanzo a la Andaluza, or Andalusian-style Chickpea Fritters, are a popular dish in Andalusian cuisine. These savory fritters are packed with flavor and make for a delicious appetizer or snack.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 cup chopped fresh parsley
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a food processor, combine the chickpeas, onion, garlic, cumin, paprika, and parsley. Pulse until the mixture is well combined but still slightly chunky.
- Transfer the chickpea mixture to a bowl and stir in the flour, baking powder, salt, and pepper until fully incorporated.
- Heat 2 inches of vegetable oil in a large, deep skillet over medium-high heat.
- Scoop spoonfuls of the chickpea mixture and carefully drop them into the hot oil. Fry the fritters in batches for 3-4 minutes, or until golden brown and crispy.
- Remove the fritters with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
- Serve the pestiños de garbanzo warm with your favorite dipping sauce or enjoy them on their own.
