Ingredients
- 1 lb dried meat, sliced
- 1 lb olluco, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups beef or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the dried meat and cook until browned.
- Add the onion and garlic, and cook until softened.
- Stir in the tomatoes, cumin, and paprika, and cook for a few minutes.
- Add the olluco and broth, and bring to a boil.
- Reduce heat, cover, and simmer for 1 hour, or until the olluco is tender.
- Season with salt and pepper to taste.
