Andhra Chicken Pilaf (rayalaseema Kodi Pulao)

Andhra Chicken Pilaf, also known as Rayalaseema Kodi Pulao, is a flavorful and aromatic rice dish from the Telugu Cuisine of Andhra Pradesh. This dish is a perfect blend of spices, tender chicken, and fragrant basmati rice, making it a delightful one-pot meal.

Andhra Chicken Pilaf (rayalaseema Kodi Pulao)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 2 onions, thinly sliced
  • 1 tomato, chopped
  • 1/4 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 2 bay leaves
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 4-5 green cardamoms
  • 1/4 cup chopped coriander leaves
  • Salt to taste
  • 4 cups water
  • 3 tbsp oil

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Heat oil in a large pan and add the whole spices - bay leaves, cloves, cinnamon, and cardamoms. Sauté for a minute.
  3. Add the sliced onions and sauté until they turn golden brown.
  4. Now, add the ginger-garlic paste and sauté for a couple of minutes.
  5. Add the chopped tomato, red chili powder, turmeric powder, and garam masala. Cook until the tomatoes are soft.
  6. Add the chicken pieces and cook until they are sealed and the masala coats the chicken.
  7. Whisk the yogurt and add it to the chicken. Cook for 5 minutes.
  8. Drain the soaked rice and add it to the chicken. Mix gently.
  9. Pour in the water, add salt, and bring it to a boil. Then, cover and cook on low heat until the rice is done.
  10. Garnish with chopped coriander leaves and serve hot.
