Andhra Chicken Pilaf (rayalaseema Kodi Pulao)
Andhra Chicken Pilaf, also known as Rayalaseema Kodi Pulao, is a flavorful and aromatic rice dish from the Telugu Cuisine of Andhra Pradesh. This dish is a perfect blend of spices, tender chicken, and fragrant basmati rice, making it a delightful one-pot meal.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 2 onions, thinly sliced
- 1 tomato, chopped
- 1/4 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 2 bay leaves
- 4-5 cloves
- 2-inch cinnamon stick
- 4-5 green cardamoms
- 1/4 cup chopped coriander leaves
- Salt to taste
- 4 cups water
- 3 tbsp oil
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- Heat oil in a large pan and add the whole spices - bay leaves, cloves, cinnamon, and cardamoms. Sauté for a minute.
- Add the sliced onions and sauté until they turn golden brown.
- Now, add the ginger-garlic paste and sauté for a couple of minutes.
- Add the chopped tomato, red chili powder, turmeric powder, and garam masala. Cook until the tomatoes are soft.
- Add the chicken pieces and cook until they are sealed and the masala coats the chicken.
- Whisk the yogurt and add it to the chicken. Cook for 5 minutes.
- Drain the soaked rice and add it to the chicken. Mix gently.
- Pour in the water, add salt, and bring it to a boil. Then, cover and cook on low heat until the rice is done.
- Garnish with chopped coriander leaves and serve hot.
