Ingredients

  • 1 whole chicken, cleaned and pat dry
  • 3 tablespoons soy sauce
  • 3 tablespoons calamansi juice
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 stalk lemongrass, pounded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix soy sauce, calamansi juice, garlic powder, onion powder, black pepper, and salt.
  3. Rub the mixture all over the chicken, including inside the cavity.
  4. Stuff the lemongrass inside the cavity of the chicken.
  5. Place the chicken on a roasting pan and roast in the preheated oven for 1 hour or until the skin is golden and crispy, and the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving.
