Ingredients
- 1 whole chicken, cleaned and pat dry
- 3 tablespoons soy sauce
- 3 tablespoons calamansi juice
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1 stalk lemongrass, pounded
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix soy sauce, calamansi juice, garlic powder, onion powder, black pepper, and salt.
- Rub the mixture all over the chicken, including inside the cavity.
- Stuff the lemongrass inside the cavity of the chicken.
- Place the chicken on a roasting pan and roast in the preheated oven for 1 hour or until the skin is golden and crispy, and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
