Andorran Apricot Jam (Mermelada d'Abricots Andorrana)
Mermelada d'Abricots Andorrana, or Andorran Apricot Jam, is a delightful preserve that captures the sweet and tangy flavors of ripe apricots. This traditional Andorran recipe is perfect for spreading on toast, pairing with cheese, or using as a filling for pastries.
Ingredients
- 2 kg ripe apricots, pitted and chopped
- 1 kg granulated sugar
- 1 lemon, juiced
Instructions
- In a large pot, combine the chopped apricots, sugar, and lemon juice. Let the mixture sit for 1 hour to allow the fruit to release its juices.
- Place the pot on the stovetop over medium heat. Stir the mixture until the sugar has completely dissolved.
- Bring the jam to a boil, then reduce the heat and let it simmer for 1 hour, stirring occasionally, until it reaches a thick, jam-like consistency.
- Remove the pot from the heat and let the jam cool for 10 minutes.
- Pour the jam into sterilized jars and seal them tightly. Allow the jam to cool to room temperature before refrigerating.
