Andorran Cheese Fondue (Fondu de Formatge Andorrà)
Fondu de Formatge Andorrà, or Andorran Cheese Fondue, is a traditional dish from the small principality of Andorra, nestled in the Pyrenees mountains between France and Spain. This rich and flavorful fondue is perfect for sharing with friends and family on a cozy evening.
Ingredients
- 400g Andorran cheese (such as Tomme or Fontina), grated
- 1 clove garlic, halved
- 200ml dry white wine
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- Freshly ground black pepper
- Cubed bread, for dipping
Instructions
- In a bowl, toss the grated cheese with cornstarch until evenly coated.
- Rub the inside of a fondue pot with the cut sides of the garlic clove.
- Pour the wine into the pot and heat over medium heat until it starts to bubble.
- Gradually add the cheese to the pot, stirring constantly in a figure-eight motion until melted and smooth.
- Stir in the lemon juice and a pinch of black pepper.
- Transfer the fondue pot to the table and serve with cubed bread for dipping.
