Andrijevica Lamb Shank Stew
Andrijevica Lamb Shank Stew is a traditional Montenegrin dish that is hearty, flavorful, and perfect for a cozy dinner. This stew is slow-cooked to perfection, allowing the tender lamb shanks to soak up all the delicious flavors of the vegetables and spices.
Ingredients
- 4 lamb shanks
- 2 onions, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- Season the lamb shanks with salt, pepper, and paprika.
- Heat some oil in a large pot over medium-high heat. Brown the lamb shanks on all sides, then remove and set aside.
- Add the onions, carrots, and celery to the pot. Cook until the vegetables start to soften, then add the garlic, bay leaves, and thyme.
- Pour in the beef broth and return the lamb shanks to the pot. Bring to a simmer, then reduce the heat to low, cover, and cook for 2 hours or until the lamb is tender.
- Once the lamb is tender, remove the shanks from the pot and set aside. Skim off any excess fat from the surface of the stew.
- Return the pot to the stove and simmer the stew uncovered for an additional 10-15 minutes to thicken the sauce.
- Season the stew with salt and pepper to taste. Serve the lamb shanks with the vegetables and sauce.
