Anginares Yemistes (greek-style Stuffed Artichokes)

Ingredients

  • 4 large artichokes
  • 1 cup short-grain rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the stems. Cut off the top third of each artichoke and use a spoon to remove the choke from the center.
  2. In a bowl, combine the rice, onion, garlic, dill, parsley, 1/4 cup of olive oil, lemon juice, salt, and pepper. Mix well.
  3. Stuff the rice mixture into the center of each artichoke, pressing it down firmly.
  4. Place the stuffed artichokes in a large pot. Add enough water to cover the bottom of the pot, then drizzle the remaining 1/4 cup of olive oil over the artichokes.
  5. Cover the pot and cook the artichokes over low heat for 1 hour, or until the rice is tender and the artichokes are cooked through.
  6. Serve the stuffed artichokes hot, drizzled with a little extra olive oil and a squeeze of lemon juice.
