Anginares Yemistes, or Greek-style Stuffed Artichokes, is a classic Greek dish that is bursting with flavor. This recipe combines tender artichoke hearts with a savory filling of rice, herbs, and spices, creating a delightful dish that is perfect for a special occasion or a comforting family meal.
Ingredients
- 4 large artichokes
- 1 cup short-grain rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/2 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the stems. Cut off the top third of each artichoke and use a spoon to remove the choke from the center.
- In a bowl, combine the rice, onion, garlic, dill, parsley, 1/4 cup of olive oil, lemon juice, salt, and pepper. Mix well.
- Stuff the rice mixture into the center of each artichoke, pressing it down firmly.
- Place the stuffed artichokes in a large pot. Add enough water to cover the bottom of the pot, then drizzle the remaining 1/4 cup of olive oil over the artichokes.
- Cover the pot and cook the artichokes over low heat for 1 hour, or until the rice is tender and the artichokes are cooked through.
- Serve the stuffed artichokes hot, drizzled with a little extra olive oil and a squeeze of lemon juice.
