Ingredients
- 1.5 lbs beef, cut into cubes
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 cup coconut milk
- 2 cups beef broth
- 2 large potatoes, peeled and diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef cubes to the pot and brown on all sides.
- Stir in the ground cumin, coriander, turmeric, paprika, and cayenne pepper, and cook for 2 minutes.
- Pour in the coconut milk and beef broth, then add the diced potatoes. Season with salt and pepper.
- Bring the curry to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender and the sauce has thickened.
- Garnish with fresh cilantro before serving.
