Ingredients
- 2 cups dried black beans, soaked overnight
- 1 lb pork shoulder, cut into chunks
- 1/2 lb smoked sausage, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 6 cups water
Instructions
- Rinse the soaked black beans and set aside.
- In a large pot, brown the pork shoulder and smoked sausage over medium heat.
- Add the chopped onion and minced garlic to the pot, and sauté until the onion is soft.
- Stir in the soaked black beans, bay leaves, paprika, cumin, salt, and pepper.
- Pour in the water and bring the stew to a boil.
- Reduce the heat to low, cover, and simmer for 2 hours, or until the beans are tender and the meat is cooked through.
- Adjust the seasoning if needed, then serve the stew hot.
