Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 2 bell peppers, sliced
- 3 cups okra, sliced
- 2 cups eggplant, diced
- 1 cup water
- 1/4 cup palm oil
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, paprika, and ground coriander.
- In a large pot, heat the palm oil over medium heat. Add the seasoned chicken and cook until browned on all sides.
- Add the onions, garlic, and tomatoes to the pot. Cook until the onions are translucent.
- Stir in the bell peppers, okra, and eggplant. Pour in the water and bring the stew to a simmer.
- Cover the pot and let the stew cook for about 45 minutes, or until the chicken is tender and the vegetables are cooked through.
