Angolan Chicken Stew (muamba De Galinha)

Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 1 cup palm oil
- 1 cup chicken broth
- 1 tsp ground ginger
- 1 tsp ground coriander
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, ginger, and coriander.
- In a large pot, heat the palm oil over medium heat and add the seasoned chicken pieces. Cook until browned on all sides, then remove and set aside.
- In the same pot, sauté the onions, garlic, and red bell pepper until softened.
- Add the tomatoes, paprika, and bay leaf, and cook for a few minutes.
- Return the chicken to the pot and add the chicken broth. Cover and simmer for 45 minutes, or until the chicken is cooked through and tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Muamba de Galinha hot with rice or funge (a traditional Angolan side dish made from cassava flour).
