Ingredients
- 2 cups of jasmine rice
- 1 can (14 oz) of coconut milk
- 1 lb of large shrimp, peeled and deveined
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 scotch bonnet pepper, finely chopped
- 2 tablespoons of olive oil
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are soft and fragrant.
- Add the jasmine rice to the pot and stir to coat the grains with the vegetables and oil.
- Pour in the coconut milk and 2 cups of water. Season with paprika, salt, and pepper. Stir well to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the rice simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
- While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little olive oil over medium-high heat and sauté the shrimp for 2-3 minutes on each side, until they are pink and opaque.
- Once the rice is cooked, fluff it with a fork and gently fold in the cooked shrimp. Adjust the seasoning if necessary.
