Ingredients

  • 2 cups of jasmine rice
  • 1 can (14 oz) of coconut milk
  • 1 lb of large shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper, finely chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are soft and fragrant.
  2. Add the jasmine rice to the pot and stir to coat the grains with the vegetables and oil.
  3. Pour in the coconut milk and 2 cups of water. Season with paprika, salt, and pepper. Stir well to combine all the ingredients.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the rice simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
