Ingredients
- 1 lb salted codfish, soaked and flaked
- 2 onions, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 green bell pepper, sliced
- 1 cup okra, sliced
- 2 cups spinach, chopped
- 1/4 cup palm oil
- 1/4 cup water
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the onions, garlic, and tomatoes. Cook until the onions are soft and the tomatoes are broken down, about 5 minutes.
- Add the flaked codfish, bell pepper, and okra. Stir to combine.
- Pour in the water and bring the stew to a simmer. Cover and cook for 30 minutes, stirring occasionally.
- Add the spinach and season with salt and pepper. Cook for an additional 10 minutes.
- Remove from heat and let the stew rest for 5 minutes before serving.
