Ingredients
- 2 cups dried corn kernels
- 1 can red kidney beans, drained and rinsed

- 2 potatoes, diced
- 1/2 cup chopped kale or collard greens
- 4 cups vegetable broth

Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the tomatoes, bell pepper, carrots, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the corn, kidney beans, kale or collard greens, vegetable broth, paprika, cumin, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low. Simmer for 1 hour, or until the corn is tender and the flavors have melded together.
