Ingredients

  • 2 lbs fresh crab, cleaned and cracked
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 cup palm oil
  • 1 cup water
  • 1 tsp ground ginger
  • 1 tsp ground paprika
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the onions and garlic, and sauté until the onions are soft and translucent.
  3. Add the tomatoes, bell peppers, ginger, paprika, coriander, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Add the crab pieces to the pot and stir to coat them with the vegetable and spice mixture.
  5. Pour in the water, cover the pot, and let the stew simmer for 30-40 minutes, or until the crab is fully cooked and the flavors have melded together.
  6. Adjust the seasoning if needed, and serve the Moamba de Caranguejo hot with steamed rice or crusty bread.
