Angolan Crab Stew (moamba De Caranguejo)

Ingredients
- 2 lbs fresh crab, cleaned and cracked
- 2 onions, finely chopped
- 3 tomatoes, diced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 1 cup palm oil
- 1 cup water
- 1 tsp ground ginger
- 1 tsp ground paprika
- 1 tsp ground coriander
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the onions and garlic, and sauté until the onions are soft and translucent.
- Add the tomatoes, bell peppers, ginger, paprika, coriander, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Add the crab pieces to the pot and stir to coat them with the vegetable and spice mixture.
- Pour in the water, cover the pot, and let the stew simmer for 30-40 minutes, or until the crab is fully cooked and the flavors have melded together.
- Adjust the seasoning if needed, and serve the Moamba de Caranguejo hot with steamed rice or crusty bread.
