Angolan Dried Fish Stew (calulu De Peixe Seco)

Ingredients

  • 500g dried fish
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 green bell pepper, sliced
  • 1 cup okra, sliced
  • 2 cups water
  • 1/4 cup palm oil
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Soak the dried fish in water for 1 hour to rehydrate, then drain and remove any bones.
  2. In a large pot, heat the palm oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the tomatoes, bell pepper, and okra to the pot, and cook for 5 minutes.
  4. Stir in the paprika, ground coriander, salt, and pepper.
  5. Add the dried fish to the pot and pour in the water. Bring to a simmer and cook for 45 minutes, stirring occasionally.
  6. Adjust seasoning if needed and serve the stew hot with rice or bread.
