Ingredients
- 500g dried meat
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cloves of garlic, minced
- 1 green bell pepper, sliced
- 1 cup okra, chopped
- 2 cups water
- 1/4 cup palm oil
- 1 tsp ground coriander
- 1/2 tsp ground black pepper
- Salt to taste
Instructions
- Soak the dried meat in water for 2 hours to rehydrate, then drain and cut into small pieces.
- In a large pot, heat the palm oil over medium heat and sauté the onions and garlic until fragrant.
- Add the tomatoes, bell pepper, and okra, and cook for 5 minutes.
- Stir in the dried meat, coriander, black pepper, and salt. Pour in the water and bring to a boil.
- Reduce the heat, cover the pot, and simmer for 1.5 hours, stirring occasionally, until the meat is tender.
- Serve the Moamba de Carne Seca hot with rice or funge.
