Ingredients

  • 1 tsp paprika

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the onions and garlic, and sauté until softened.
  3. Stir in the tomatoes, bell pepper, and eggplant, and cook for 5 minutes.
  4. Add the fish fillets, okra, paprika, cayenne pepper, and vegetable broth. Season with salt and pepper.
  5. Cover the pot and simmer for 45 minutes, or until the fish is cooked through and the vegetables are tender.
  6. Serve the Angolan Fish Stew hot, with a side of rice or crusty bread.
