Ingredients
- 1 lb fresh fish fillets
- 2 onions, chopped
- 3 tomatoes, diced
- 1 bell pepper, sliced
- 2 cups okra, sliced
- 1 cup eggplant, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 cups vegetable broth
- 1/4 cup palm oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the onions and garlic, and sauté until softened.
- Stir in the tomatoes, bell pepper, and eggplant, and cook for 5 minutes.
- Add the fish fillets, okra, paprika, cayenne pepper, and vegetable broth. Season with salt and pepper.
- Cover the pot and simmer for 45 minutes, or until the fish is cooked through and the vegetables are tender.
- Serve the Angolan Fish Stew hot, with a side of rice or crusty bread.
