Ingredients
- 1 pound okra, trimmed and sliced
- 2 tablespoons palm oil
- 1 onion, chopped
- 3 garlic cloves, minced

- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the ground coriander and paprika, and cook for another minute to toast the spices.
- Add the sliced okra to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the diced tomatoes and vegetable broth, and season with salt and pepper.
- Bring the stew to a simmer, then reduce the heat and let it cook for 30 minutes, or until the okra is tender.
- Adjust the seasoning if needed, and serve the Muamba de Quiabo hot with rice or bread.
