Angolan Okra Stew (muamba De Quiabo)

Ingredients

  • 1 pound okra, trimmed and sliced
  • 2 tablespoons palm oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Stir in the ground coriander and paprika, and cook for another minute to toast the spices.
  4. Add the sliced okra to the pot and cook for 5 minutes, stirring occasionally.
  5. Pour in the diced tomatoes and vegetable broth, and season with salt and pepper.
  6. Bring the stew to a simmer, then reduce the heat and let it cook for 30 minutes, or until the okra is tender.
  7. Adjust the seasoning if needed, and serve the Muamba de Quiabo hot with rice or bread.
