Ingredients
- 2 lbs pork shoulder, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 2 tbsp palm oil
- 1 cup chicken broth
- 1 tsp paprika
- 1 tsp ground ginger
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the onions and garlic, and sauté until softened.
- Add the pork cubes to the pot and brown on all sides.
- Stir in the paprika, ground ginger, and cayenne pepper, coating the pork evenly.
- Add the red bell pepper and tomatoes, and cook for a few minutes.
- Pour in the chicken broth, season with salt and pepper, and bring to a simmer.
- Cover the pot and let the stew simmer for about 1 hour, or until the pork is tender.
- Garnish with fresh cilantro before serving.
