Angolan Pumpkin Soup (kinuangu)
Angolan Pumpkin Soup, also known as Kinuangu, is a traditional dish from Angolan cuisine that is perfect for the fall season. This creamy and flavorful soup is made with pumpkin, coconut milk, and aromatic spices, creating a comforting and satisfying meal.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 can (400ml) coconut milk
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced pumpkin to the pot and sauté for a few minutes.
- Pour in the vegetable broth and coconut milk. Stir in the ground cumin and cinnamon. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.
- Adjust the seasoning if needed, and serve the soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground cinnamon.
