Angolan Seafood Rice (arroz De Marisco)

Ingredients

  • 1 lb mixed seafood (shrimp, squid, mussels)
  • 2 cups rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 3 cups fish or seafood broth
  • 1/2 cup white wine
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the diced bell peppers and cook for a few minutes until they begin to soften.
  3. Stir in the rice and cook for 2-3 minutes, stirring constantly to coat the rice with the oil and vegetables.
  4. Pour in the white wine and let it simmer until it's mostly absorbed.
  5. Add the diced tomatoes and seafood broth to the pot. Bring to a boil, then reduce the heat to low and let it simmer for 15 minutes, stirring occasionally.
  6. After 15 minutes, add the mixed seafood to the pot and continue to cook for an additional 10-15 minutes, or until the seafood is fully cooked and the rice is tender.
  7. Season with salt and pepper to taste, and sprinkle with chopped cilantro before serving.
