Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp palm oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup (240ml) tomato puree
  • 1 cup (240ml) chicken broth
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Heat the palm oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the bell pepper, tomato puree, chicken broth, paprika, cayenne pepper, salt, and pepper. Stir to combine.
  3. Simmer the sauce for 15 minutes, then add the shrimp and cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
  4. Stir in the chopped cilantro and adjust the seasoning if needed.
  5. Serve the Muamba de Camarão hot with steamed rice or crusty bread.
