Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tbsp palm oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup (240ml) tomato puree
- 1 cup (240ml) chicken broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp chopped fresh cilantro
Instructions
- Heat the palm oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
- Add the bell pepper, tomato puree, chicken broth, paprika, cayenne pepper, salt, and pepper. Stir to combine.
- Simmer the sauce for 15 minutes, then add the shrimp and cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
- Stir in the chopped cilantro and adjust the seasoning if needed.
- Serve the Muamba de Camarão hot with steamed rice or crusty bread.
