Anguillan Style Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender.
  4. Stir in the cooked rice, diced tomatoes, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes.
  5. Stuff the bell peppers with the beef and rice mixture, and place them in a baking dish.
  6. Sprinkle the shredded cheese on top of the stuffed peppers.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender.
