Angutet (fish Head Curry Noodles)

Angutet, or Fish Head Curry Noodles, is a traditional dish from Yup'ik Cuisine that is both hearty and flavorful. This dish is perfect for warming up on a cold day and is a great way to make use of the entire fish.

Angutet (fish Head Curry Noodles)

Ingredients

  • 1 fish head, cleaned and cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 4 cups fish or vegetable broth
  • 8 ounces rice noodles
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the curry powder and turmeric, and cook for 1-2 minutes to toast the spices.
  4. Add the fish head pieces to the pot and pour in the fish or vegetable broth. Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the fish head is tender.
  5. While the fish head is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
  6. Season the fish head curry with salt and pepper to taste.
  7. To serve, divide the cooked rice noodles among serving bowls and ladle the fish head curry over the noodles.
  8. Garnish with fresh herbs or a squeeze of lime, if desired.
