Angutet (fish Head Curry Noodles)
Angutet, or Fish Head Curry Noodles, is a traditional dish from Yup'ik Cuisine that is both hearty and flavorful. This dish is perfect for warming up on a cold day and is a great way to make use of the entire fish.
Ingredients
- 1 fish head, cleaned and cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 4 cups fish or vegetable broth
- 8 ounces rice noodles
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the curry powder and turmeric, and cook for 1-2 minutes to toast the spices.
- Add the fish head pieces to the pot and pour in the fish or vegetable broth. Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the fish head is tender.
- While the fish head is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
- Season the fish head curry with salt and pepper to taste.
- To serve, divide the cooked rice noodles among serving bowls and ladle the fish head curry over the noodles.
- Garnish with fresh herbs or a squeeze of lime, if desired.
