Annapurna Aloo Dum

Ingredients

  • 4 large potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup water

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  4. Add the turmeric, cayenne pepper, and garam masala. Stir well to combine.
  5. Add the cubed potatoes and salt. Stir to coat the potatoes with the spices.
  6. Pour in the water and bring to a simmer. Cover and cook for 20-25 minutes, or until the potatoes are tender.
  7. Garnish with fresh cilantro and serve hot.
