Antigua Enchiladas (Enchiladas Antigueñas)

Ingredients
- 12 corn tortillas
- 2 cups shredded cooked chicken
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1/2 cup chicken broth
- 1/2 cup tomato sauce
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup vegetable oil
- 1/2 cup crumbled queso fresco
- 1/2 cup chopped fresh cilantro
- 1 avocado, sliced
Instructions
- In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced tomatoes and minced garlic to the saucepan. Cook for a few minutes until the tomatoes are soft.
- Pour in the chicken broth and tomato sauce. Season with cumin, oregano, salt, and pepper. Simmer for 10 minutes.
- Heat the corn tortillas in a separate skillet until they are warm and pliable.
- Dip each tortilla in the tomato sauce mixture, then fill with shredded chicken. Roll up the tortillas and place them seam-side down in a baking dish.
- Pour the remaining tomato sauce over the enchiladas. Sprinkle with crumbled queso fresco.
- Bake in a preheated oven at 350°F (175°C) for 15 minutes, or until the enchiladas are heated through and the cheese is melted.
- Top with chopped cilantro and sliced avocado before serving.
