Ingredients

  • 12 corn tortillas
  • 2 cups shredded cooked chicken
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/2 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup vegetable oil
  • 1/2 cup crumbled queso fresco
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, sliced

Instructions

  1. In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the diced tomatoes and minced garlic to the saucepan. Cook for a few minutes until the tomatoes are soft.
  3. Pour in the chicken broth and tomato sauce. Season with cumin, oregano, salt, and pepper. Simmer for 10 minutes.
  4. Heat the corn tortillas in a separate skillet until they are warm and pliable.
  5. Dip each tortilla in the tomato sauce mixture, then fill with shredded chicken. Roll up the tortillas and place them seam-side down in a baking dish.
  6. Pour the remaining tomato sauce over the enchiladas. Sprinkle with crumbled queso fresco.
  7. Bake in a preheated oven at 350°F (175°C) for 15 minutes, or until the enchiladas are heated through and the cheese is melted.
  8. Top with chopped cilantro and sliced avocado before serving.
