Anzac Biscuit Ice Cream Sandwiches

Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup desiccated coconut
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 1 pint vanilla ice cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, coconut, and brown sugar.
  3. In a small saucepan, melt the butter and golden syrup over low heat. Stir in the baking soda.
  4. Pour the butter mixture into the dry ingredients and mix until well combined.
  5. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet and flatten slightly with the back of a spoon.
  6. Bake for 10-12 minutes or until golden brown. Allow the biscuits to cool completely.
  7. Once the biscuits are cool, scoop a generous amount of vanilla ice cream onto half of the biscuits and sandwich with the remaining biscuits.
  8. Wrap the ice cream sandwiches individually in plastic wrap and freeze for at least 2 hours before serving.
