Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 cup desiccated coconut
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 2 tablespoons golden syrup
- 1 teaspoon baking soda
- 1 pint vanilla ice cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, flour, coconut, and brown sugar.
- In a small saucepan, melt the butter and golden syrup over low heat. Stir in the baking soda.
- Pour the butter mixture into the dry ingredients and mix until well combined.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet and flatten slightly with the back of a spoon.
- Bake for 10-12 minutes or until golden brown. Allow the biscuits to cool completely.
- Once the biscuits are cool, scoop a generous amount of vanilla ice cream onto half of the biscuits and sandwich with the remaining biscuits.
- Wrap the ice cream sandwiches individually in plastic wrap and freeze for at least 2 hours before serving.
