These Anzac Biscuit Ice Cream Sandwiches are a delicious twist on the classic Aussie Anzac biscuit. The combination of chewy Anzac biscuits and creamy ice cream is a match made in dessert heaven!
Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 cup desiccated coconut
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 2 tablespoons golden syrup
- 1 teaspoon baking soda
- 2 tablespoons boiling water
- 1.5 quarts vanilla ice cream
Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, flour, coconut, and brown sugar.
- In a small saucepan, melt the butter and golden syrup together.
- Dissolve the baking soda in the boiling water, then add to the butter mixture.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Roll tablespoonfuls of the mixture into balls and place them on the prepared baking sheet, flattening them slightly with your fingers.
- Bake for 10-12 minutes or until golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once the Anzac biscuits are completely cool, scoop a generous amount of vanilla ice cream onto the flat side of one biscuit, then sandwich with another biscuit.
- Repeat with the remaining biscuits and ice cream to make 6 ice cream sandwiches.
- Wrap each sandwich in plastic wrap and place in the freezer for at least 2 hours before serving.
