Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup desiccated coconut
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water
  • 1.5 quarts vanilla ice cream

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, coconut, and brown sugar.
  3. In a small saucepan, melt the butter and golden syrup together.
  4. Dissolve the baking soda in the boiling water, then add to the butter mixture.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Roll tablespoonfuls of the mixture into balls and place them on the prepared baking sheet, flattening them slightly with your fingers.
  7. Bake for 10-12 minutes or until golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Once the Anzac biscuits are completely cool, scoop a generous amount of vanilla ice cream onto the flat side of one biscuit, then sandwich with another biscuit.
  9. Repeat with the remaining biscuits and ice cream to make 6 ice cream sandwiches.
  10. Wrap each sandwich in plastic wrap and place in the freezer for at least 2 hours before serving.
