  • 1 cup chicken broth
  • 2 apples, peeled, cored, and sliced

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the vegetable oil in a large Dutch oven over medium-high heat.
  3. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
  4. Lower the heat to medium and add the sliced onion to the pot. Cook until softened, about 5 minutes.
  5. Stir in the minced garlic and cook for an additional 1 minute.
  6. Pour in the apple cider and chicken broth, and bring to a simmer.
  7. Return the chicken thighs to the pot, along with the sliced apples and fresh thyme.
  8. Cover the pot and let the chicken braise for 45 minutes, or until the chicken is cooked through and tender.
  9. Season with additional salt and pepper to taste before serving.
