Ingredients
- 4 chicken thighs

- 2 tablespoons fresh thyme
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the vegetable oil in a large Dutch oven over medium-high heat.
- Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
- Lower the heat to medium and add the sliced onion to the pot. Cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Pour in the apple cider and chicken broth, and bring to a simmer.
- Return the chicken thighs to the pot, along with the sliced apples and fresh thyme.
- Cover the pot and let the chicken braise for 45 minutes, or until the chicken is cooked through and tender.
- Season with additional salt and pepper to taste before serving.
