Appeltaart Cupcakes

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 4 apples, peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the flour, granulated sugar, cold butter, egg, baking powder, salt, and vanilla extract. Mix until crumbly.
  3. Divide the dough evenly among the cupcake liners, pressing it into the bottom to form a crust.
  4. In a separate bowl, mix the diced apples, brown sugar, cinnamon, and raisins (if using) until well combined.
  5. Spoon the apple mixture over the crust in each cupcake liner.
  6. Bake for 25-30 minutes, or until the crust is golden brown and the apples are tender.
  7. Allow the cupcakes to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
