Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 egg
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 4 apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine the flour, granulated sugar, cold butter, egg, baking powder, salt, and vanilla extract. Mix until crumbly.
- Divide the dough evenly among the cupcake liners, pressing it into the bottom to form a crust.
- In a separate bowl, mix the diced apples, brown sugar, cinnamon, and raisins (if using) until well combined.
- Spoon the apple mixture over the crust in each cupcake liner.
- Bake for 25-30 minutes, or until the crust is golden brown and the apples are tender.
- Allow the cupcakes to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
