Apple and Walnut Stuffed Pork Loin (Gefüllter Schweinebraten mit Äpfeln und Walnüssen)

Ingredients

  • 1.5 kg pork loin
  • 2 apples, peeled, cored, and diced
  • 1 cup chopped walnuts
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix together the diced apples, chopped walnuts, onion, garlic, thyme, salt, and pepper.
  3. Cut a pocket into the pork loin and stuff it with the apple and walnut mixture.
  4. Secure the opening with kitchen twine.
  5. Season the outside of the pork loin with salt and pepper.
  6. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  7. Sear the pork loin on all sides until browned, about 5 minutes per side.
  8. Transfer the skillet to the preheated oven and roast the pork loin for 50-60 minutes, or until the internal temperature reaches 63°C (145°F).
  9. Let the pork loin rest for 10 minutes before slicing and serving.
