Ingredients
- 1.5 kg pork loin
- 2 apples, peeled, cored, and diced
- 1 cup chopped walnuts
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix together the diced apples, chopped walnuts, onion, garlic, thyme, salt, and pepper.
- Cut a pocket into the pork loin and stuff it with the apple and walnut mixture.
- Secure the opening with kitchen twine.
- Season the outside of the pork loin with salt and pepper.

- Sear the pork loin on all sides until browned, about 5 minutes per side.
- Transfer the skillet to the preheated oven and roast the pork loin for 50-60 minutes, or until the internal temperature reaches 63°C (145°F).
- Let the pork loin rest for 10 minutes before slicing and serving.
