Apricot and Walnut Pilaf (Qovurma Pilavı)
Qovurma Pilavı is a traditional Azerbaijani dish that combines the sweetness of apricots with the richness of walnuts in a flavorful pilaf. This dish is perfect for special occasions and gatherings, as it is both delicious and visually stunning.
Ingredients
- 1 cup basmati rice
- 1/2 cup dried apricots, chopped
- 1/2 cup walnuts, chopped
- 1 onion, finely chopped
- 2 tablespoons butter
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the rice and stir to coat it with the butter.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the chopped apricots and walnuts, and season with salt and pepper.
- Cover and continue to cook for another 10 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork before serving.
