Apricot and Walnut Pilaf (Qovurma Pilavı)

Ingredients

  • 1 cup basmati rice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup walnuts, chopped
  • 1 onion, finely chopped
  • 2 tablespoons butter
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the rice and stir to coat it with the butter.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 15 minutes.
  6. Stir in the chopped apricots and walnuts, and season with salt and pepper.
  7. Cover and continue to cook for another 10 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the pilaf with a fork before serving.
