Apricot Cookies

Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract

- 1 cup dried apricots, chopped
Instructions
- Preheat the oven to 350°F (175°C).
