Apricot Delight (Qamar al-Din)
Qamar al-Din, also known as Apricot Delight, is a traditional Armenian fruit leather made from apricots. This sweet and tangy treat is a popular dessert and snack in Armenian cuisine.
Ingredients
- 2 lbs ripe apricots, pitted and chopped
- 1 cup sugar
- 1/4 cup water
Instructions
- In a large pot, combine the chopped apricots, sugar, and water.
- Cook over medium heat, stirring occasionally, until the apricots are soft and the mixture thickens, about 30 minutes.
- Transfer the mixture to a blender and blend until smooth.
- Line a baking sheet with parchment paper and spread the apricot mixture evenly to about 1/4 inch thickness.
- Place the baking sheet in a warm, dry place to dry for 4-5 days, or until the fruit leather is no longer sticky to the touch.
- Cut the fruit leather into strips and roll them up for serving.
