Qamar al-Din, also known as Apricot Delight, is a traditional Armenian fruit leather made from apricots. This sweet and tangy treat is a popular dessert and snack in Armenian cuisine.

Apricot Delight (Qamar al-Din)

Ingredients

  • 2 lbs ripe apricots, pitted and chopped
  • 1 cup sugar
  • 1/4 cup water

Instructions

  1. In a large pot, combine the chopped apricots, sugar, and water.
  2. Cook over medium heat, stirring occasionally, until the apricots are soft and the mixture thickens, about 30 minutes.
  3. Transfer the mixture to a blender and blend until smooth.
  4. Line a baking sheet with parchment paper and spread the apricot mixture evenly to about 1/4 inch thickness.
  5. Place the baking sheet in a warm, dry place to dry for 4-5 days, or until the fruit leather is no longer sticky to the touch.
  6. Cut the fruit leather into strips and roll them up for serving.
