Apricot Dumplings, also known as Marillenknödel, are a traditional Austrian dessert made with juicy apricots wrapped in a potato dough and coated with sweet breadcrumbs. This delightful treat is perfect for showcasing the delicious flavors of ripe apricots.
Ingredients
- 6 ripe apricots
- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 6 sugar cubes
- 1/2 cup breadcrumbs
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg
Instructions
- Peel and pit the apricots, then place a sugar cube in the center of each apricot.
- In a bowl, mix the mashed potatoes, flour, salt, and egg to form a dough.
- Divide the dough into 6 equal portions and flatten each portion into a disc.
- Wrap each apricot with the potato dough, ensuring the apricot is completely covered.
- Bring a large pot of water to a boil and carefully drop the dumplings into the boiling water.
- Cook the dumplings for about 15-20 minutes or until they float to the surface.
- In a separate pan, melt butter and add breadcrumbs, then toast until golden brown.
- Roll the cooked dumplings in the toasted breadcrumbs and sugar mixture.
- Serve the apricot dumplings warm and enjoy!
