Aqpik, also known as wild berry cobbler, is a traditional Yup'ik dessert that celebrates the abundance of wild berries in the region. This sweet and tart cobbler is a perfect way to enjoy the natural flavors of the Alaskan wilderness.
Ingredients
- 4 cups wild berries (such as blueberries, raspberries, or salmonberries)
- 1 cup sugar
- 1/4 cup water
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
Instructions
- In a saucepan, combine the wild berries, sugar, and water. Cook over medium heat for 10 minutes, stirring occasionally, until the berries release their juices. Pour the mixture into a 9x9 inch baking dish.
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the flour, baking powder, and salt. Stir in the melted butter and milk until just combined. Drop spoonfuls of the batter over the berry mixture.
- Bake for 30-35 minutes, or until the topping is golden brown and the berries are bubbling.
- Let the aqpik cool for a few minutes before serving. Enjoy the cobbler warm, with a scoop of vanilla ice cream if desired.
