Ingredients

  • 1 moose heart, cleaned and trimmed
  • 1 cup rendered moose fat
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage

Instructions

  1. Preheat the stovetop to medium heat.
  2. In a skillet, heat the rendered moose fat and sauté the onion and garlic until translucent.
  3. Remove from heat and stir in the bread crumbs, salt, pepper, thyme, and sage to create the stuffing mixture.
  4. Carefully stuff the moose heart with the prepared stuffing mixture.
  5. Place the stuffed moose heart in a large pot and cover with water.
  6. Simmer on low heat for 2 hours, or until the moose heart is tender.
  7. Remove the stuffed moose heart from the pot and let it rest for a few minutes before slicing and serving.
