Ingredients

  • 3 cups cooked risotto rice
  • 1 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, cut into small cubes
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • 1 cup marinara sauce
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the cooked risotto rice with the grated Parmesan cheese, salt, and pepper.
  2. Take a small portion of the rice mixture and flatten it in your palm. Place a cube of mozzarella in the center and roll the rice into a ball, ensuring the mozzarella is completely enclosed.
  3. Dip each rice ball into the beaten eggs, then coat with breadcrumbs, ensuring they are fully covered.
  4. In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the arancini in batches until they are golden brown and crispy, about 4-5 minutes. Drain on paper towels.
  5. Serve the arancini hot with marinara sauce for dipping.
