Arancini (arancini)
Arancini, also known as arancini di riso, are delicious Italian rice balls that are typically stuffed with cheese, meat, or peas, and then deep fried. They make for a perfect appetizer or snack, and are sure to be a hit at any gathering.
Ingredients
- 3 cups cooked risotto rice
- 1 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, cut into small cubes
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- 1 cup marinara sauce
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- In a large bowl, mix the cooked risotto rice with the grated Parmesan cheese, salt, and pepper.
- Take a small portion of the rice mixture and flatten it in your palm. Place a cube of mozzarella in the center and roll the rice into a ball, ensuring the mozzarella is completely enclosed.
- Dip each rice ball into the beaten eggs, then coat with breadcrumbs, ensuring they are fully covered.
- In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the arancini in batches until they are golden brown and crispy, about 4-5 minutes. Drain on paper towels.
- Serve the arancini hot with marinara sauce for dipping.
