Ingredients
- 3 cups cooked risotto rice
- 1 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, diced
- 1/2 cup frozen peas, thawed
- 1/4 cup chopped fresh parsley
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked risotto rice, Parmesan cheese, mozzarella cheese, peas, parsley, and salt and pepper. Mix well.
- Take a small portion of the rice mixture and form it into a ball. Make a small indentation in the center and place a cube of mozzarella in the middle. Close the ball tightly around the cheese to form a smooth, round arancini.
- Dip each arancini into the beaten eggs, then roll in breadcrumbs until fully coated.
- In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the arancini in batches until golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels.
- Serve the arancini hot, with marinara sauce for dipping if desired.
