Arancini di Riso is a classic Neapolitan dish consisting of crispy, golden-fried rice balls filled with a savory center. This delicious appetizer or snack is perfect for any occasion and is sure to impress your guests with its rich flavors and satisfying texture.

Arancini Di Riso

Ingredients

  • 3 cups cooked risotto rice
  • 1 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, diced
  • 1/2 cup frozen peas, thawed
  • 1/4 cup chopped fresh parsley
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked risotto rice, Parmesan cheese, mozzarella cheese, peas, parsley, and salt and pepper. Mix well.
  2. Take a small portion of the rice mixture and form it into a ball. Make a small indentation in the center and place a cube of mozzarella in the middle. Close the ball tightly around the cheese to form a smooth, round arancini.
  3. Dip each arancini into the beaten eggs, then roll in breadcrumbs until fully coated.
  4. In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the arancini in batches until golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels.
  5. Serve the arancini hot, with marinara sauce for dipping if desired.
