Arawa (island Style Bbq)
Arawa is a traditional Island Style BBQ dish from the Solomon Islands, featuring a flavorful marinade and tender grilled meat.
Ingredients
- 2 lbs chicken thighs
- 1 cup coconut milk
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon brown sugar
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 lime, juiced
Instructions
- In a bowl, mix together coconut milk, soy sauce, garlic, ginger, brown sugar, paprika, black pepper, cayenne pepper, and lime juice to create the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Remove the chicken from the marinade and shake off excess. Discard the remaining marinade.
- Grill the chicken on the preheated grill until no longer pink in the center and the juices run clear, about 6-8 minutes per side.
- Let the chicken rest for a few minutes before serving.
