Ingredients

  • 2 lbs chicken thighs
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 lime, juiced

Instructions

  1. In a bowl, mix together coconut milk, soy sauce, garlic, ginger, brown sugar, paprika, black pepper, cayenne pepper, and lime juice to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat and lightly oil the grate.
  4. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade.
  5. Grill the chicken on the preheated grill until no longer pink in the center and the juices run clear, about 6-8 minutes per side.
  6. Let the chicken rest for a few minutes before serving.
