Ingredients

  • 4 large artichokes
  • 1 cup breadcrumbs
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 lemons, juiced and zested
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the artichokes by cutting off the top third and trimming the sharp tips of the leaves.
  3. In a bowl, mix together the breadcrumbs, feta cheese, parsley, garlic, olive oil, lemon juice, lemon zest, salt, and pepper.
  4. Stuff the breadcrumb mixture between the leaves of the artichokes.
  5. Place the stuffed artichokes in a baking dish and drizzle with a little olive oil.
  6. Cover the dish with foil and bake for 45 minutes, or until the artichokes are tender.
  7. While the artichokes are baking, prepare the lemon garlic sauce by mixing together lemon juice, lemon zest, minced garlic, and olive oil in a small bowl.
  8. Once the artichokes are done, serve them with the lemon garlic sauce on the side.
