Ingredients
- 4 large artichokes
- 1 cup breadcrumbs
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 lemons, juiced and zested
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the artichokes by cutting off the top third and trimming the sharp tips of the leaves.
- In a bowl, mix together the breadcrumbs, feta cheese, parsley, garlic, olive oil, lemon juice, lemon zest, salt, and pepper.
- Stuff the breadcrumb mixture between the leaves of the artichokes.
- Place the stuffed artichokes in a baking dish and drizzle with a little olive oil.
- Cover the dish with foil and bake for 45 minutes, or until the artichokes are tender.
- While the artichokes are baking, prepare the lemon garlic sauce by mixing together lemon juice, lemon zest, minced garlic, and olive oil in a small bowl.
- Once the artichokes are done, serve them with the lemon garlic sauce on the side.
