Arbëreshë Chicken and Mushroom Bake (Pule me Kërpudha)
Pule me Kërpudha, or Arbëreshë Chicken and Mushroom Bake, is a traditional dish from the Arbëreshë cuisine, which is a unique blend of Italian and Albanian flavors.
Ingredients
- 4 chicken breasts
- 2 cups mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and dried thyme.
- In a skillet, brown the chicken breasts on both sides. Remove and set aside.
- In the same skillet, sauté the onions and garlic until softened.
- Add the mushrooms and cook until they release their liquid.
- Pour in the chicken broth and simmer for 5 minutes.
- Stir in the heavy cream and Parmesan cheese, then return the chicken to the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Serve the chicken and mushrooms hot, garnished with fresh herbs if desired.
