Arbëreshë Chicken and Mushroom Bake (Pule me Kërpudha)

Ingredients

  • 4 chicken breasts
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and dried thyme.
  3. In a skillet, brown the chicken breasts on both sides. Remove and set aside.
  4. In the same skillet, sauté the onions and garlic until softened.
  5. Add the mushrooms and cook until they release their liquid.
  6. Pour in the chicken broth and simmer for 5 minutes.
  7. Stir in the heavy cream and Parmesan cheese, then return the chicken to the skillet.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
  9. Serve the chicken and mushrooms hot, garnished with fresh herbs if desired.
