Arbëreshë Chicken and Potato Stew (Speca të Mbushur)

Ingredients
- 4 chicken thighs
- 4 potatoes, peeled and diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on all sides, about 5 minutes.
- Add the chopped onion, minced garlic, and diced red bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.
- Sprinkle the paprika and dried oregano over the chicken and vegetables. Season with salt and pepper to taste.
- Add the diced potatoes to the pot and pour in the chicken broth. Stir to combine all the ingredients.
- Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
- Once done, remove the pot from the heat and let the stew rest for a few minutes before serving.
