Arbëreshë Chicken and Potato Stew (Speca të Mbushur)

Ingredients

  • 4 chicken thighs
  • 4 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on all sides, about 5 minutes.
  2. Add the chopped onion, minced garlic, and diced red bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Sprinkle the paprika and dried oregano over the chicken and vegetables. Season with salt and pepper to taste.
