Salatë me Patëllxhanë, or Arbëreshë Chickpea Salad, is a traditional dish from the Arbëreshë cuisine, which is a unique Italian-Albanian fusion cuisine. This refreshing salad is perfect for a light and healthy meal, and it's packed with flavors and nutrients.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium eggplant, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
