Arbëreshë Eggplant and Tomato Bake (Patëllxhanë të Mbushur)

Ingredients

  • 2 large eggplants, sliced lengthwise
  • 2 tomatoes, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 4 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the eggplant slices on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
  3. Bake the eggplant slices for 15 minutes, then remove from the oven and let them cool.
  4. In a bowl, mix the breadcrumbs, Parmesan cheese, chopped parsley, onion, and garlic.
  5. Place a spoonful of the breadcrumb mixture on each eggplant slice and roll them up.
  6. Arrange the rolled eggplant slices in a baking dish, top with the tomato slices, and drizzle with the remaining olive oil.
  7. Bake for 25-30 minutes, or until the tomatoes are slightly caramelized.
  8. Serve the Patëllxhanë të Mbushur hot, garnished with additional chopped parsley if desired.
