Arbëreshë Eggplant and Tomato Bake (Patëllxhanë të Mbushur)
Patëllxhanë të Mbushur, or Arbëreshë Eggplant and Tomato Bake, is a traditional dish from the Arbëreshë cuisine, which is a unique blend of Italian and Albanian flavors. This flavorful and comforting dish is perfect for a family dinner or a gathering with friends.
Ingredients
- 2 large eggplants, sliced lengthwise
- 2 tomatoes, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 4 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Place the eggplant slices on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
- Bake the eggplant slices for 15 minutes, then remove from the oven and let them cool.
- In a bowl, mix the breadcrumbs, Parmesan cheese, chopped parsley, onion, and garlic.
- Place a spoonful of the breadcrumb mixture on each eggplant slice and roll them up.
- Arrange the rolled eggplant slices in a baking dish, top with the tomato slices, and drizzle with the remaining olive oil.
- Bake for 25-30 minutes, or until the tomatoes are slightly caramelized.
- Serve the Patëllxhanë të Mbushur hot, garnished with additional chopped parsley if desired.
